ALMOND MOON RISES OVER DORSET

Award-winning craft baker, Honeybuns, has launched a new gluten- and wheat-free slice to join its range of hand-made cakes and slices. The new cake, called Almond Moon, is created from a crunchy polenta shortbread topped with almond frangipane and chunky pieces of toasted almond and juicy cranberries.

Based on an old dairy farm in Dorset, Honeybuns has led the field in producing luxurious cakes and bakes for people with wheat and gluten intolerances or allergies.

"Almond Moon is a real almond lover's dream cake," says Emma Goss-Custard who established Honeybuns. The absence of flour intensifies the natural almond flavour of the cake. The polenta and ground almond shortbread base is deliciously crunchy and buttery. By using ground nuts rather than wheat, we are making sure that all of the ingredients contribute to the overall flavour and texture. We are amazed at the dry 'wheat-free' offerings sold to people and we are constantly tasting, re-testing and tweaking our recipes to ensure that each one is utterly delicious. Our cakes are intended for everybody, coeliacs and non-coeliacs alike", explained Emma Goss Custard.

In keeping with Honeybuns' policy of finding ingredients locally, the new Almond Moon is made with Dorset butter from Denhay Farms, free-range eggs from Willow Farm which is in the next village to Honeybuns and ground almonds and polenta from local supplier Handley Cross Farm Foods.

Emma is running gluten-free baking courses on the farm at Honeybuns. Each course will include a morning in the bakery learning how to make a range of gluten free cakes, a generous lunch of local food followed by a demonstration and talk. There will also be cakes, recipes and local goodies to take away.

The new Almond Moon retails at £2.50 and is available at independent retailers, farm shops and delicatessens throughout the country.

Honeybuns was started, and is still run each day, by Emma. She started Honeybuns by literally getting on her bike! As a student, Emma cycled around Oxford delivering her home-made brownies and cakes to cafes and offices. Emma's cakes have won many top food awards including the Great Taste Awards Supreme Champion.
