Farinata inspired savoury

hopefully you’ve had a good week.
I’m exhausterised, absolutely bush whacked. I think being out & about quite a bit this week it has floored me a bit. Thursday’s outing was terrifically helpful. I met up with our largest wholesaler in Gloucester & had a very productive meeting. It is often quite difficult to get like minded wholesale companies on board. They are ,understandably, after margins all the time & very often (although not in this company’s case) they would not mind what they were shifting as long as it was quickly.Producers, on the other hand, often feel that wholesalers owe them a favour in terms of promoting their artisan wares. Very often the wholesaler can only, realistically, be a set of wheels from producer to retailer.Anyway, it is a pleasure to do business with the majority of our wholesalers & we all seem to have found some kind of workable compromise.This meeting resulted in me getting to know how Honeybuns can improve its communication with one or two blossoming accounts.I guess transparency is the key. If the wholesaler shares information with us , we can then work on improving how we do things.
We have re tweaked our savoury-again!!! It’s kind of addictive. We do a bit more reading particularly on Intalian country cooking & get more ideas on how to tweak the product. we have settled on a slightly spongey ‘farinata’ inspired base. This traditionally would have been made using chickpea flour, olive oil, sea salt & little else. We’ve added buckwheat flour rosemary & roasted sweet red pepper. We’re keeping our fingers crossed that we can locally source a hard goats cheese at a sensible prce for the topping. The cheddar proved just a little bit too oily on heating up.
We did more munching/taste trials this afternoon & everything was just delicious.
The savoury is being launched to all remaining wholesalers next week. A lot were sent this week.
We are now beginning to see new orders coming in for the cake side of the business which is always good news. We have a good number of new accounts to look after & this will take up most of my time til March.
