Coeliac Awareness Week at Honeybuns

We’re celebrating Coeliac Awareness week (16th-22nd May) by cooking up a gluten  free lunch recipe for you each day. I missed popping a recipe up on http://www.facebook.com/HoneybunsBakery yesterday so to make amends here is a lovely little lunch /supper recipe. We often whip this one up at home for  speedy  eats-

Cheesy Vegetables Mediterranean style served with wild rice.

To feed 2- we just add tonnes of veggies- no exact measurements for this required-it’s from the bish bosh bash school of cooking!

Take one baking tray with sides- add cherry toms, chopped garlic, rough chopped red onion, ditto courgettes & mushrooms.Use half a block of Halloumi cheese- cube it & add to the mix. Drizzle all these ingredients  generously with olive oil & sprinkle over with cracked black pepper . Add a dash of balsamic & then mix up with your hands ensuring everything gets covered in the lovely peppery,herby oil.

Pop into a preheated oven at 180 deg c for 20 mins.

Whilst in the oven steam or boil some of that gorgeous nutty wild rice-a gluten free brand eg Lima. When drained add some fresh chopped basil to the rice- heap onto plates & then dish out the cheesy veggie mix ontop of your rice.

This should take 30 mins in all tops.

Naturally for puds we’d suggest something from the Honeybuns cake tin- hows about Heathcliffe brownie which can be warmed through in the oven before you switch it off- only for 4-5 mins & then serve with fresh raspberries & a dollop of creme fraiche & if you want to push the boat out- a little orange zest added to the creme fraiche-.?

Aside from celebrating lots of lovely gluten free dishes for Coeliac Awareness Week we’ve been busy too with sourcing gluten free oats. Over the years we’ve tried lots & FINALLY we’ve found some that work perfectly in our flapjack recipes. We have a great archive of flapjack recipes which we popped into storage until we could find a suitable gluten free oat so we’re delighted that we can now start to reintroduce these flapjacks in a gluten free format.

Honeybuns gluten free flapjacks will be launching later on in the year.

We’re also very near to unveiling our twin pack of mini Amondis onto the market. These dinky little numbers are ideal for sharing or- if that notion makes you chuckle out loud (as it did in the Hbuns office)- then you can always try & save one for later-..yep- we chuckled at that idea too.

Our office opening party went with a swing & lots of our neighbours & friends joined us in the old classroom. It is so pretty inside- thanks to lots of upcycled furniture which has been repainted, liberal use of polka dot oilcloth & lovely linen cushions- we’ve fallen in love a lot with a Somerset company called Two for Joy-

We’re gearing up for Glastonbury too. Our little Bee Shack Cafe will be on tour there again- our 7th year of serving gluten free goodies in a cosy Bee Shack Cafe setting to hungry, weary festival folk.
