Lemon Curd Cakelets

These delicately flavoured lemon cupcakes are made with our gluten free cake mix and make a great treat in lunch boxes.

Lemon curd Cakelets 2

Ingredients

1x Honeybuns gluten free cake mix

2x free range eggs

170g butter

2 tbsp good quality lemon curd – made with butter and real lemons!

1 tsp pure lemon oil

Zest of 1 lemon plus zest of 2nd lemon to decorate

Juice of 2 fresh lemons

Golden caster or granulated sugar to sprinkle

Method

Preheat the oven to 180°C / 350°F / Gas 4

Make up your gluten free cake mix with the eggs and butter as per the on-pack instructions.

Add the lemon curd, lemon oil and zest of 1 lemon to this mixture. Mix well.

Spoon into 12 paper cake cases in a 12 hole muffin tin. 

Bake for 14-15 minutes.

Squeeze the juice of 2 lemons over the cakes as soon as they come out of the oven.

After 5 minutes, lift each cake onto a wire cooling rack. Once completely cooled, decorate with a sprinkle of grated lemon zest & golden sugar.
