October is the month we celebrate all things apple-y. Here’s the gluten free recipe for Em’s Easy Apple Cake, which went down a storm in our October Bee Shack cafe open day. We’ve included cranberries as an alternative. You can also find a recipe for Dorset Apple Cake in our book, Honeybuns Gluten free Baking.
1 x Honeybuns gluten free cake mix, made up with 2 free-range eggs and 170g melted butter as per pack instructions.
100g apples cored and grated (1-2 apples)
80g dried cranberries or raisins
Juice of 1 lemon
½ tsp mixed spice or cinnamon
1-2 tbsp cinnamon sugar (demerara sugar stored with cinnamon sticks).
3 eating apples
Pre-heat your oven to 350F/ 180 deg c
Brush a baking tin (32 x 20cm) liberally with melted butter.
Make the gluten free cake mix up with the butter and eggs as per the pack instructions.
Peel, core & grate the apples and add to the cake mix with the other ingredients.
Pour the mix into your baking tin.
Peel and core the 3 eating apples and cut into slices. Lay slices over the top of the cake and sprinkle with cinnamon sugar.
Bake for 22-24 minutes.
