Lemon Love Puddings – Share the love this Valentines Day

Our Valentines Lemon Love Gift includes a St. Clements cake, vintage pressed glass sundae dish, two vintage teaspoons, and a specially created ‘Lemon Love’ pudding recipe.

These lovely little puddings are a bit of a hybrid. Think lemon meringue pie meets Eton Mess in a pretty dessert bowl . Super swift to make, and they taste sensational. These ingredients serve one person, but to make more, just multiply by the number of servings required.

Serves 1 (or share with your true love!)

INGREDIENTS 

1 regular slice of Honeybuns St Clements cake

Generous glug of Limoncello

3 generous tbs good quality gluten-free lemon curd

6 peeled segments of mandarin – either fresh or in juice.

3-4 tbs greek yoghurt

1 tbsp crumbled meringue (you can use shop bought small nests or make your own)

Zest of 1 lemon

METHOD  

Slice the St Clements slice in half lengthways and then into 4 squares or heart shapes with a cookie cutter.

Pop them in a saucer and pour a generous glug of Limoncello over them. Allow this to soak in for a couple of minutes.

Spread 1 tbsp of the lemon curd over the cake pieces and transfer the cake pieces to your glass dish. The idea is for the cake pieces to line the outside of the dish. You can use spare bits of cake to put in the bottom of the dish to stop the side cake bits falling down.

Add the mandarin segments to the dish.

Mix the Greek yoghurt with the remaining lemon curd and spoon over the top.

Crumble the meringue pieces over the top and decorate with finely grated lemon zest.
