Roasted Pepper & Paprika Muffins Recipe

These delectable little muffins are really easy to make and delicious served with a veggie bean chilli – have a go at our easy gluten free recipe and see for yourself!

Makes 12 muffins

Ingredients:
1 cornbread mix made up as per the instructions
180g / 6.5 oz roasted red/ yellow or orange peppers (this equals approx 2-3 peppers)
2tbs rapeseed oil 
1.5 tsp paprika
1 tsp chilli powder

Method:
Brush a 12 hole non-stick muffin pan with melted butter. 
Deseed and chop the peppers and pop in a roasting tray, add the oil and tumble the peppers to coat them in oil. 
Roast the peppers at 200 deg C/ 400 deg F for 20 mins. 
Leave to cool. 
Mix the cornbread up as per pack instructions and add the spices and pre-roasted peppers. 
Spoon into the muffin pan and bake at 180 deg C/350 deg F for 16-18 mins.

Best served straight from the oven.
