Cornbread In The Round Recipe

This easy to make recipe is for a straight unadulterated gluten free cornbread baked in a round.

SERVES 4

What ingredients do you need

50g polenta

50g brown rice flour

¼ tsp salt

1 tsp gluten free baking powder

A pinch of pepper

200g butter, melted

Pre-heat your oven to 180°C / Gas 4

Pour your dry ingredients into a mixing bowl. Add the melted butter to the bowl and whisk (electric or hand) until a smooth batter is formed.

Spoon the mixture into a 20cm buttered sandwich tin.

Bake for 16-18 mins or until the top springs back when touched. Allow to cool before turning out of tin.

Use palette knife to loosen cornbread & tip onto a cooling rack.

You can cover it with an optional topping of a handful of good strong grated cheddar and fresh snipped thyme. Delicious served straight from the oven with soup.
