Bonfire Night S’mores Recipe

Gluten free S'more on baking paper with three marshmallows

This is our gluten free version of traditional American S’mores – definitely a recipe for those with a sweet tooth!

S’mores consist of graham crackers (a type of biscuit) sandwiched around melted chocolate and a squishy toasted marshmallow. We’ve amplified the chocolate in our recipe by swapping biscuits for our gluten free Tinker cookies – ultimate indulgence! You can vary them further by swapping the chocolate for caramel or nut butter.

Makes: 4 S’mores

Ingredients

8 Triple Chocolate Tinker Cookies

1 bag of vegetarian marshmallows (normal ones will be fine if you’re not vegetarian)

100g / 3 ½ oz of your favourite dark or milk chocolate

Method

Preheat your grill to high and line a baking tray with baking parchment. Place 4 of the Triple Chocolate Tinker cookies upside down on the tray and top with 2 or 3 marshmallows. Grill for just a couple of minutes until the marshmallows are starting to crack and melt.

Break the chocolate into a heatproof bowl and melt in the microwave – do this in 30 second bursts and make sure to stir each time, to avoid burning. Spread the base of the remaining 4 Triple Chocolate Tinker cookies with a heaped spoonful of the chocolate and then sandwich on top of the melty marshmallow layer. Tuck in!

You could always do these on Bonfire Night by toasting the marshmallows over the fire – simply slide them off the skewer directly onto the cookie. It’s good fun, but can be a bit messy!
