Mini Carrot Loaf Cakes Recipe

Mini gluten free carrot cakes on wire cooling rack

Carrot cake is a delight at any time of year, but we think that it’s especially Spring-worthy, enjoyed outside in the sun. Try your hand at our gluten free recipe – mini loaves filled with carrots, walnuts and sultanas and topped with a creamy mascarpone icing.

To make them dairy free, swap the topping for a dairy free buttercream or a drizzle of glace icing.

Suitable for gluten free, dairy free & lactose free (without topping)

Ingredients

140g Brown sugar

70g Sorghum flour

70g Ground Almonds

25g Ground golden flaxseed

1.5 tsp Gluten free Baking powder

0.2 tsp Vanilla powder

2 eggs

140g / 5 oz sunflower oil

1 tsp cinnamon

½ tsp nutmeg

Zest of one orange

125g / 4½ oz grated carrots

50g / 1¾ oz sultanas

50g / 1¾ oz walnuts, chopped

250g / 9 oz mascarpone

2 tbsps icing sugar

½ teaspoon cinnamon

Makes 12 small cakes

Method

Gluten free and dairy free mini carrot cake loaves on wire rack

Preheat your oven to 170°C/325°F/Gas 3. Lightly grease and line 12 mini loaf tins – if you don’t have these, then you can just as easily make cupcakes or one 18cm round cake. Set your prepared tins to one side.

For the sponge, add the brown sugar, sorghum flour, ground almonds, golden flaxseed, baking powder and vanilla powder to a bowl, along with the orange zest, spices, eggs and sunflower oil. Mix well with a handheld mixer for a minute or so, until the ingredients are well combined and a smooth batter is formed. Add the grated carrots, chopped walnuts and sultanas and stir in with a wooden spoon.

Split the cake mix evenly amongst the tins or cupcake cases. Pop into the oven and bake for approximately 15 minutes – the cakes should be well risen and lightly browned (if making one large cake, check after 15 minutes but it’s likely that it will need longer). Remove the cakes from the oven and leave to cool in the tins for a couple of minutes, before removing and leaving to cool fully on a wire rack.

For the icing, beat together the mascarpone, icing sugar and pinch of cinnamon. Spread evenly over the cooled cakes and finish with a light sprinkling of ground cinnamon, or some chopped walnuts.
