Gluten free, dairy free and vegan Oaty Tropical granola

Bring the tropical sunshine to you!

Is it just us, but this time of year we always start to wish we were jetting off to somewhere hot and tropical for a bit of winter sun. Bring the sunshine to you instead, with this speedy and simple recipe for gluten free and dairy free tropical granola. Made using our vegan Oaty Coconut Bar, (now  discontinued) but our Oaty Raspberry Bar will work beautifully too, and generous handfuls of dried fruits and nuts.

Ingredients
4 x Oaty Raspberry Bar (available from our online shop)

2 handfuls each of the following:

Coconut curls, lightly toasted

Dried apricots, chopped

Pecan nuts, chopped

Banana chips

Don’t feel that you have to stick rigidly to the recipe – you can use any of your favourite fruits, nuts and seeds. Dried mango, pineapple or papaya would all work wonderfully in place of the apricots, and the pecan nuts could be subbed for walnuts or pistachios.

Method
Lightly crumble the bars into a bowl – you want to aim for a mixture of large and small pieces. Then just add the handfuls of your nuts and fruits, give it all a stir, and store in an airtight jar or container.

Snack on it by the handful, or sprinkle over yoghurt or ice cream (or a dairy free alternative). It’s also lovely scattered over roasted fruits such as nectarines and plums.
