Avocado, bean and chilli tostados
‘Tostados’ translates simply as ‘toasted’. This super simple dish makes a great brunch or supper, simply pile the toppings high and enjoy. Kids will love to be involved in making them too.
Suitable for gluten free, vegetarian
Ingredients
Gluten free tortilla wraps
400g can of refried beans
200g can of kidney beans in water
Cherry tomatoes
100g grated cheddar
1 avocado, sliced
1 green chilli
Cayenne pepper
Seasoning
Method
Mix the refried beans in a bowl with the strained kidney beans. Add a teaspoon of cayenne pepper and mix together.
Chop up the avocado, tomatoes and chilli and place in separate bowls to serve. Then grate the cheese and add to another bowl.
Heat the grill and place a tortilla underneath until it starts to brown, then turn and grill the other side until crispy. The tortillas will go hard and crispy, this way you are then able to top them with the beans and cheese and place back under the grill to melt.
Once removed, add the avocado, tomato and chilli and enjoy!
You can of course add your own toppings! Perhaps serve with a side salad of crispy leaves.
