How quick is it?

If you’re using Honeybuns vegan brownies then it’s just a few minutes to put together. If you make your own brownies it will take you a total of say 35 minutes including baking time.

Is this recipe healthy?

The brownies themselves are made from unprocessed, wholesome store cupboard ingredients. The coconut milk in the brownies is naturally high in fibre and according to the BBC good good website (link), it’s also a good source of vitamins’ C, E, B1, B3, B5 and B6′ plus minerals including selenium and potassium.

What ingredients do I need to make this vegan chocolate brownie ice cream cake?

I’ve included alternative ‘swapsie’ ingredient ideas in brackets. We aim to make our blog recipes easy to adapt. Hopefully you’ll already have the ingredients in your cupboard ready to use up. The vegan ice cream we used was Judes Vegan Chocolate Ice Cream. It tastes super decadent and is really easy to scoop out of the tub too. We bought ours from Sainsburys and it’s widely available.

I need to make a vegan chocolate Birthday cake – Help!

No problem. This will be a birthday cake in a million. Just use vegan friendly soy based birthday candles. See my top tips below. You can also decorate with vegan chocolate drops and edible flowers. Check out Eat My Flowers online.

Storage and portion information:

This brownie recipe will make 15 squares of brownie. Once baked and cooled the brownies will store for 5 days in an airtight container. They freeze well too.

Once you’ve sandwiched your cakes and ice-cream you need to dig in before the filling melts-.so spoons at the ready!

For the brownies:

  • 500g sugar (we love light Muscodvado but granulated white, brown or coconut sugar will all work)
  • 500ml coconut milk
  • 500g dark chocolate (it needs to be gluten free and vegan. Moo Free is good)
  • 400g gluten free plain flour (Doves is good)
  • A pinch of salt
  • 4tsp cider vinegar
  • Oil for brushing

For the ice cream filling you’ll need:

2 x  460ml tub of Judes vegan chocolate ice cream

What kit will I need?

  • 3 x tray bake tins measuring approx: 30cm x 23cm x 4cm
  • Electric mixer
  • Mixing bowl
  • Baking parchment
  • Large metal spoon or palette knife
  • Microwave or saucepan & bowl

How to make your simple ice cream filling

Simply spread the Judes vegan chocolate ice cream into one of your three baking trays.

It needs to be the same rectangular size as the brownie tray bakes. You can use a palette knife to spread it and it’s quite soft once you take it out of the freezer.Once spread pop back ibn the freezer whilst you now crack on with the brownies.

How to make your vegan gluten free vegan chocolate brownies.

Here’s my method:

1. Preheat oven to 180°C / Gas 4.

2. Line your tins with baking parchment and brush your tray bake tin with dairy free oil, it’s a sticky mix.

3. Melt the chocolate buttons using a microwave or bains marie method.

Bains marie method: Bring a saucepan of water to simmering point, placing a bowl on top of the pan. Place the chocolate in the bowl, ensuring no steam or water comes into contact with the chocolate. Stir gently & occasionally until the chocolate melts.

Alternatively use a microwave. Just take care to gently melt the chocolate -if it burns there is no rescuing it.

4. Heat your coconut milk up in a microwave or in a pan.

5. Pop all your ingredients including the melted chocolate and the warmed up coconut milk into a mixing bowl. Using an electric mixer blend all the ingredients together until you get a smooth, glossy brownie mix.

6. Split this mixture evenly into both of your oiled tins.

7. Bake for 30 mins, until springy on top.

8. After baking leave the brownies in the tins until cooled completely. You can then take them out of the tin using a fish slice and onto a cooling rack or flat board.

9. Then to assemble your chocolate brownie ice cream cake simply turn out your frozen ice-cream rectangle and sandwich between the two brownies. Voila! A gorgeous chocolatey vegan celebration cake.

Top Tips

1. Once you’ve spread your ice cream and before refreezing it – you can press chocolate buttons, fruit or any manner of delicious flavours into the ice cream. We love pressing in fresh strawberries. You can always soften your ice cream further and stir the fruit in, like a posher McFlurry
