Gluten free coleslaw recipe

We call this ‘Dunc’s Slaw’, so called after the coleslaw Em’s brother Duncan serves at his Newcastle eatery, Camera Shop. Dunc knows a thing or two about making the tastiest salads, just take a look at his Instagram feed – if only we lived nearer…

Enjoy your slaw as a side dish to a barbeque, or a light summer frittata or gluten free summer quiche.

We also love the Kilner “lunch jar” salad – perfect for lunch on the go. It not only looks great but it’s practical too! The trick is in the layering: start with your dressing, which goes in the bottom of the jar. Top this with something chunky, like robust veggies or some protein, and follow this with your slightly softer veg. Before finishing off with those little extras – nuts, seeds and herbs.

Eat as a simple lunchtime picnic – simply stir up the layers just before you tuck in.

Both our suggested dressings work really well. For a Honeybuns twist on the classic homemade coleslaw, we’ve included a dairy free and vegan dressing option thereby making it as inclusive to as many people as possible. We used dairy free cream cheese from soy based brand Tofutti available online and in health food shops.

To make this into a lovely winter slaw swap the raddishes with sliced sprouts.

As a side salad
Place all the coleslaw ingredients into a large mixing bowl and gently stir with a wooden spoon until they are mixed up. For dressing no 1, stir the ingredients together in a bowl. Combine with the coleslaw and serve. It’s a pourable dressing. For dressing no 2, either mash the ingredients together with a fork or use a food processor and blitz until smooth. Combine with the coleslaw and serve. This dressing has more of a creamy, paste like texture.

As a layered salad in a jar
Pour your chosen dressing into the bottom of the jar. Then layer up with your sliced fruit and veg, finishing with the nuts, seeds, parsley and pepper.

How long does this coleslaw keep for?

This coleslaw will keep for 3 days in the fridge.
