Elderflower and Raspberry Jelly recipe

These pretty little jellies are a perfect treat on a sunny afternoon, especially now the elderflowers are in bloom!

We’ve used shop bought cordial, but why not make your own!

Gluten free.

Elderflower and raspberry jellies with spoons

Ingredients

2 sachets Vege-Gel (We used Dr. Oetker Vege-Gel which is a vegetarian alternative to gelatine)

250ml Elderflower cordial

50ml Water

Handful fresh raspberries

Method

Firstly, place the Vege-Gel in a saucepan with the water and elderflower cordial and heat until simmering. Make sure to whisk whilst still over the heat, then remove once simmered.

Allow the mixture to cool slightly, whilst still stirring to make sure it doesn’t set, and then pour into your jelly moulds or pretty glasses.

Whilst it’s still a liquid, add the raspberries, which should sit perfectly on the top

Why not…

To make it even better, why not substitute the water for prosecco?

Instead of 50ml water and 250ml Elderflower, use 100ml elderflower cordial and 200ml prosecco!
