Cornbread Pancakes Recipe

Gluten free cornbread mix pancake

These tasty cornbread pancakes make a great lazy Sunday brunch… Have a go at our super simple gluten free recipe.

50g Polenta

25g Tapioca flour

25g Sorghum flour

1/4 tsp salt

1tsp gluten free baking powder

70ml milk

100g melted butter

2 free range eggs

Mix all the ingredients together with electric hand mixer until really well combined.

Pre-heat a frying pan with a tbsp rapeseed oil or other neutral oil. Then add your batter – you should get a good half dozen pancakes from the mix.

We served it uber decadent style in honour of Independence Day by layering mascarpone cheese, sliced banana & molten dulce de leche.

We added a sprinkle of very dark chocolate 72% buttons on top as a “Happy Holidays” flourish.

For a lighter version try swapping milk for coconut milk in the batter recipe & layer with sliced Mango, a good apricot jam (Bonne Maman), toasted coconut curls and a squeeze of lime……
