Chai waffles with caramelised pears

These lovely gluten free waffles are easy to make and turn out pleasingly light and fluffy. Don’t stray from the batter recipe though. We tried making them with shop bought gluten free flour but they were not a patch on these.

Recipe makes: 18 finger shaped waffles

Waffles: free from gluten / dairy / nuts

Caramelised pears: free from gluten / nuts

This recipe is taken from Honeybuns All Day Cook Book.

Caramelised pears

  • 40g butter
  • 4 pears, peeled, cored and sliced (Conference or Comice)
  • 2 tbsp crystallised sweetener of choice
  • 1 tsp vanilla paste
  • ½ tsp ground cinnamon
  • Finely grated zest of 1 lemon

Waffles

  • 2 eggs
  • 100g polenta
  • 75g sorghum flour
  • 100g tapioca flour
  • 350ml coconut milk
  • 75ml rapeseed oil, plus extra for brushing
  • 4 tbsp crystallised sweetener of choice
  • 1½ tsp Chai Spice (get our chai spice recipe here)
  • 1 tsp gluten free baking powder

To make the caramelised pears

  1. Melt 1 tablespoon of butter in a frying pan on a medium heat.
  2. Add the pear slices and fry on each side for 3-4 minutes until golden brown.
  3. Remove the pears from the pan and set to one side.
  4. Add the sweetener, remaining butter, vanilla paste and cinnamon to the warm pan, place on a medium heat and stir until melted.
  5. Return the pear slices to the pan, turn them so that they are coated in the sauce and add the lemon zest.
  6. Transfer the mixture to an oven dish and keep warm.

To make the gluten free waffles

  1. Switch on your waffle maker to preheat.
  2. Place all of the waffle ingredients into a bowl and beat with an electric mixer on high speed for 1 minute.
  3. Spray or brush the inside of the heated waffle maker with rapeseed oil.
  4. Start making your waffles by spooning the mix into your machine and cook for 3-4 minutes or until golden brown and crispy on the outside.
  5. Once cooked, stack your waffles on a plate and keep warm by covering with foil.

To serve

  • Serve the caramelised pears on top of the warm waffles.

TIP

A light dusting of cinnamon on top of the pears is a lovely addition, as is a dollop of crème fraiche.
