Expanding our range of vegan treats with the new Cherry Crumble Bar traybake

Our test kitchen has been hard at work working expanding the range of decadent vegan treats we offer. We’re delighted with this latest addition to the range. The Cherry Crumble Bar is a datey shortbread base, topped with a morello cherry conserve and glace cherries, and finished with a lightly spiced oat crumble topping.
You’d never guess it was gluten free, dairy free and vegan either!
Like many of our cakes, we layer the taste and textures up. The date shortbread base is cooked and cooled before we spread a thick layer of morello cherry conserve and glace cherry halves, and then add a hearty layer of our special oaty crumble topping which includes light muscovado sugar, nibbed almonds and a very subtle dash of cinnamon.
Ideal for foodservice, this moreish tray bake has a pleasing texture from the nuts in the base, sweet cherry filling and firm oaty flapjack-like topping. The beautiful and natural flavours of the cherry mingle with the pleasingly soft crunch of the base and topping. It makes a great pudding warmed through and served with a vegan yoghurt or a coconut whipped cream or ice cream.
